This firm lactose-free cheese is made from unpasteurized 100% Canadian milk (thermised) and available in Old (1 year) or Extra-Old (2 year). Its texture is crumbly and more brittle than a mild Cheddar. Its taste is bold and has a pronounced butter and hazelnut flavor. Offered in blocks, shredded and sliced.
